橙子戚风蛋糕

  • 低筋面粉90克
  • 玉米淀粉8克
  • 鸡蛋4个
  • 细砂糖20克(蛋白)
  • 橙汁50克
  • 橙皮10克
  • 色拉油40克
  • 白醋几滴
  • 泡打粉5克
  • 细砂糖40克(蛋黄)

Steps to make 橙子戚风蛋糕

  • 1.材料准备。
  • 2.将蛋白分离。
  • 3.将橙汁,细砂糖,色拉油放碗里用手动打蛋器搅拌至白糖融化。
  • 4.倒入橙皮搅拌均匀。
  • 5.将低筋面粉,玉米淀粉,泡打粉混合均匀筛入橙汁里面拌匀。
  • 6.分次加入蛋黄,搅拌均匀。
  • 7.拌好的蛋黄面糊。(不要过分搅拌)
  • 8.放几滴白醋在蛋白里面,用电动打蛋器搅拌至鱼眼泡状,分三次加入细砂糖,搅拌。
  • 9.打至接近干性发泡的状态。
  • 10.将三分之二蛋白加入蛋黄面糊里,翻拌均匀。
  • 11.将混合好的面糊倒入剩下的三分之一蛋白泡沫里,轻快的翻拌均匀。切忌搅拌。
  • 12.将面糊倒入磨具里面。震几下,放入烤箱165度30--35分钟。
  • 13.取出蛋糕,迅速的倒扣在烤网上放凉脱模。
