    Steps to make 【湘菜】:潇湘猪手

    • 1.用修眉镊去毛,锅置火上下入猪手煮至10分钟祛除血末捞出。
    • 2.将猪手剁开。
    • 3.加入姜片,葱段,八角,花椒,绍酒,少许盐烧热,下入猪手。
    • 4.小火煮制30分钟。
    • 5.捞出后迅速将猪手丢入准备好的凉水中冲洗片刻,使猪手更富有弹性。
    • 6.待猪手凉透,下入六七成热油锅内煎炸,颜色略变后捞出。
    • 7.锅置火上加姜丝葱花煸炒出香味儿,转中小火加冰糖炒至琥珀色。
    • 8.下入煎炸过的猪手块,加入绍酒、盐、红辣椒、八角、香叶、少许酱油煸炒。
    • 9.煸炒至猪手均匀上色。
    • 10.加入适量的清水,使材料刚刚没及猪手,文火靠汁儿。
    • 11.待猪手上色后撒入白胡椒、剁椒、葱、姜丝、少许蒜米,淋入红油翻炒几下盛出入盘。
    • 12.上蒸气锅蒸20分钟,汤汁浓稠便可关火淋少许香醋、撒香葱盖锅盖焖2-3分钟即可。
    • 13.肉酥烂、色鲜艳、汁浓味厚、口味多变。
