戚风蛋糕一号,初次挑战~
第一次挑战戚风蛋糕,用错了配方,脱模也很糟糕,味道却是极好的!!

  • 低筋面粉100g
  • 鸡蛋5个
  • 牛奶40g
  • 玉米油40g
  • 糖粉70g
  • 酸奶30g
  • 蔓越莓干5g

Steps to make 戚风蛋糕一号,初次挑战~

  • 1.先将材料准备好,最好用冷藏鸡蛋,蛋清分离放进冰箱备用。
  • 2.蛋黄+35g糖粉搅拌
  • 3.均匀后,加入玉米油和牛奶继续搅拌
  • 4.准备筛入低筋面粉
  • 5.继续~慢慢拌匀
  • 6.不停画圆成面糊~放边凉快去,哈哈
  • 7.从冰箱里取出装蛋清的金属缸,用电动打蛋器开中低档打到有鱼眼泡泡,则可加入1/3也就是12g糖粉
  • 8.中高速打出细泡再加入1/3糖粉也就是12g,打成奶油状时将剩下1/3糖粉也就是12g加入缸中接着打
  • 9.有垂直小尖角就可以啦
  • 10.分三次将蛋白霜加入蛋黄糊,用稳准狠的手势切、刮边画半圆,切忌旋涡状搅拌,那会得到一盆液体,前面的就白做了。好了,蛋白蛋黄混合均匀也就是基本没有杂色即可。
  • 11.蛋糕糊倒入模具~
  • 12.快速从高处水平落体,震出大气泡,反复几次即可。
  • 13.送入提前预热好的烤箱160℃中层50分钟(图中是我错误示范,170℃烤了60分钟结果底焦了,才发现搜的菜谱里模具跟我的不一样,我的不是中间有柱子的大圆缸QAQ)
  • 14.刚出炉还挺好的,但被我外行脱模法给弄塌了..泪目,只好下次再接再厉了
  • 15.随便吃,搭配摩卡咖啡和酸奶、蔓越莓还蛮不错的。
