黄焖排骨
好吃到爆的黄焖排骨。看似麻烦,实刚非常简单,挂糊油炸,一次可以多做点,分装冷冻,调汤上笼蒸熟,软烂脱骨,妙不可言。

Steps to make 黄焖排骨

  • 1.冰箱冷冻的排骨:排骨剁小块,盐、葱、姜腌10分钟左右,放玉米淀粉、白面、鸡蛋抓拌均匀,放少许油再冷藏半小时,下油锅炸至金黄即可。我不喜欢放料酒,总感觉有股怪味,葱姜胡椒粉完全可以起到去腥增香的作用。
  • 2.将排骨骨放入窝盘中。上面放一片生姜,一个八角。
  • 3.另取小盆,放盐、胡椒粉、鸡精、生抽,加入适量开水,搅拌均匀。水量视食材量而放。
  • 4.将配好的汤汁倒入排骨碗中,基本与排骨持平。
  • 5.上笼中小火蒸1小时左右。有时间蒸2个小时更好。
  • 6.成品。1个小时基本可以达到脱骨效果。
