蜜红豆戚风蛋糕卷

  • 玉米油40克
  • 鲜牛奶40克
  • 蛋白里细砂糖20克
  • 蛋黄里细砂糖40克
  • 鸡蛋4个
  • 蜜红豆60克

Steps to make 蜜红豆戚风蛋糕卷

  • 1.材料准备。
  • 2.将牛奶,色拉油,细砂糖一起搅拌至白糖融化。
  • 3.倒入过筛的低粉,玉米淀粉,搅拌均匀。
  • 4.分次加入蛋黄搅拌均匀。
  • 5.拌好的蛋黄糊备用。
  • 6.加入几滴白醋,将蛋白打至鱼眼泡状态,分三次加入细砂糖,继续搅拌。
  • 7.打至接近干性发泡状态。
  • 8.将三分之二蛋白加入蛋黄面糊里,翻拌均匀。
  • 9.将混合好的面糊倒入剩下的三分之一蛋白泡沫里,轻快的翻拌均匀。切忌搅拌。
  • 10.将分散开的蜜红豆放入面糊。拌匀。
  • 11.倒入烤盘。震几下。
  • 12.入烤箱165度15--20分钟,出炉。桌上垫一张烘焙纸,将蛋糕反扣在纸上,将面上是纸轻轻去掉。
  • 13.将淡奶油打至渐显纹路,抹在放凉的蛋糕上,卷好,放冰箱冷藏2小时,取出切块。
