自制哈尔滨红肠
过年了,怎么可以没有香肠?
今年的香肠都是自己制作的。除了灌好的如皋香肠,还做了一些里道斯红肠。第一次做的红肠非常好吃,获得了大家的一致好评,所以,现在是做第二批红肠。
为了与第一次有个区别,就叫;哈尔滨红肠吧。

  • 60克
  • 淀粉125克
  • 250克
  • 味精10克
  • 里道斯调料25克

Steps to make 自制哈尔滨红肠

  • 1.准备好猪腿肉,
  • 2.准备好里道斯腌料,大蒜,味精,淀粉,
  • 3.猪小肠用清水浸泡半天,漂净。准备好灌肠的漏斗。
  • 4.猪腿肉去皮去筋,切小块.
  • 5.把猪腿肉放入料理机搅拌成馅,
  • 6.最后把大蒜头也搅拌碎,放入肉馅里,
  • 7.全部搅拌好的肉馅,
  • 8.道斯腌料与盐,味精,倒入猪肉馅里,搅拌匀,
  • 9.放入冰箱腌制24小时。
  • 10.取125克玉米淀粉,用250克水化开成水淀粉,
  • 11.把水淀粉倒入猪肉馅,搅拌匀。
  • 12.把猪小肠套在漏斗上,
  • 13.把肉馅放入漏斗,用小勺子开始灌肠,
  • 14.灌好的香肠,用针排净空气,
  • 15.逐个按自己需要的长短,拧成小节。
  • 16.烧一锅水,水温达到90度后将香肠放入锅中,小火煮30-40分钟。温度达到80度以上后,即可。
  • 17.香肠成熟后,立即关火,放入冰水里浸泡至凉,捞出,
  • 18.在背阴出晾干水分,放入冰箱冷藏,
  • 19.如果想吃有烟熏味的,可以在炒锅里放一张锡纸,上面撒些白糖,茶叶,
  • 20.上面放个蒸屉,把红肠放入,
  • 21.盖上锅盖,中火煮3分钟,让烟味烟熏一下即可。这是家庭版的简单做法。
