Steps to make 白芸豆月饼

  • 1.把转化糖浆、花生油放入干净的不锈钢盆中,然后筛入低筋面粉。碱和水按1:4的比例,配成枧水。在面盆中加入枧水,揉成光滑的面团,用保鲜膜包好,室温静置1小时。
  • 2.把静置好的面团分割成38克一份的小面团,共分成18份。
  • 3.把大白芸豆沙馅分成25克一份的小等份,共分成18份。
  • 4.用小面团用手压成面皮,然后把大白芸豆沙馅包好,收口朝下。
  • 5.把包好馅的小面团用月饼模具压成月饼生坯。
  • 6.把月饼生坯放入烤盘中,表面喷上水。烤箱150度预热5分钟,烤盘放入中层。烤箱160度,烤15分钟,月饼定型。
  • 7.把定了型的月饼取出放凉后,刷蛋黄液,再放入烤箱,烤5分钟。
  • 8.刚烤好的月饼很硬,密封3天以后食用,口感就非常好了。因为月饼有回油期。
