热干面
热干面是湖北武汉的特色小吃,是中国五大名面之一,在湖北各地大多数早餐店都会有这道美食,是湖北人最喜欢的面食。正宗的热干面酱料用的是白芝麻酱,我这里是用自制的花生酱代替了芝麻酱,个人觉得味道更香更浓更好吃。(花生酱要自制的更好,做法详见我前几天上传的菜谱http://home.meishichina.com/recipe-292920.html)

  • 碱水面250g
  • 花生酱3匙
  • 香油1匙
  • 老干妈半匙
  • 3根
  • 生抽2匙
  • 小半瓶盖
  • 老油数滴
  • 少许

Steps to make 热干面

  • 1.准备食材,碱水面是买的熟的半成品,在湖北很多菜场、超市都能买到。如果是生的碱面要先把面煮熟拌油抖散吹凉后再用。
  • 2.将花生酱、葱花、盐、老干妈、老抽一起放入碗中
  • 3.将1勺油烧热泼入碗中,再加入生抽、香油、醋拌匀备用
  • 4.起锅将水烧开,放入碱水面焯烫1分钟
  • 5.将面捞进盘中,倒入调好的花生酱
  • 6.拌匀,再放一点酸豆角即可(也可以放酸萝卜等,不喜欢吃酸菜的可以不放)
