广式五仁月饼
中秋早就过了,但今年自己做的转化糖浆还有好多呢,今天就做个反季节的点心吧!老公喜欢吃五仁馅的,就买了原料做五仁馅的吧!

  • 中筋面粉100克,
  • 奶粉5克
  • 转化糖浆75克
  • 枧水1克
  • 五仁馅700克

Steps to make 广式五仁月饼

  • 1.转化糖浆倒入碗里,加入枧水。搅拌均匀。
  • 2.再加入花生油并搅拌均匀。
  • 3.筛入中筋面粉和奶粉。用手揉成面团。把揉好的面团静置醒发1-2个小时。
  • 4.静置好的面团,分成所需的分量。皮和馅的比例是2:8或是3:7。
  • 5.把五仁馅分70克一个搓圆备用。
  • 6.手上拍点面粉防粘,取一块饼皮面团压扁,慢慢包入五仁馅。
  • 7.月饼模具内撒上一些面粉防粘(放入面粉,晃一晃,使面粉附在模具上,再将多余的面粉倒出)。把包好的面团放入模具。
  • 8.在烤盘上将月饼压成型。依次做好所有的月饼排入烤盘。
  • 9.在月饼表面喷一些水,放入预热好200度的烤箱,烤5分钟,取出来在月饼表面刷一层蛋黄水(侧面不用刷),重新放入烤箱,再烤15分钟左右,直到烤成金黄色即可出炉。
