豆沙火腿月饼

  • 火腿(蒸熟)100克
  • 低筋粉128克
  • 转化糖浆102克
  • 花生油37克
  • 碱水1.7克

Steps to make 豆沙火腿月饼

  • 1.馅料:红豆沙馅200克,冬瓜蓉100克,火腿(蒸熟)100克.
  • 2.把火腿肉去皮,切成绿豆大小的丁。
  • 3.将肉丁,红豆沙馅,冬瓜蓉一起放入大碗,充分抓匀。
  • 4.成均匀团状,备用。
  • 5.饼皮:低筋粉128克,转化糖浆102克,花生油37克,碱水1.7克。
  • 6.将碱水倒入转化糖浆,搅拌均匀。
  • 7.加入油,搅拌均匀。
  • 8.倒入面粉。
  • 9.拌成均匀面团,包上保鲜膜,松弛半小时。
  • 10.分别将皮馅分割成13等分。
  • 11.取一块饼皮,按扁,放入馅料。
  • 12.将饼皮向上推起,包好,收口。
  • 13.逐个做好,搓圆。
  • 14.放入撒粉的模具中。
  • 15.扣在案台上,向下压实。
  • 16.提起模具,轻轻脱模。摆入烤盘中,表面喷水。
  • 17.放入预热好的烤箱。中层,上火200度,下火170度,烤约5分钟,定型后取出,表面刷蛋液。再次放回烤箱中,烤约15分钟左右。
  • 18.表面金黄,出炉。
