蒜香红剁椒
辣椒里有一种主要由辣椒碱和二氢辣椒碱构成的辣椒素,这种辣椒素产生的辛辣味,在口感上广泛受到喜爱;辣椒不仅有好的口感,所含的营养成份也十分丰富,还能刺激唾液和胃液分泌,使人增进食欲,促进人体血液循环、散寒驱湿。

剁椒一种民间食品,也是比较常见的一种调味料,深受大众喜爱。

我选用的红辣椒是老爸在家里阳台上种的,特辣,琢磨着做剁椒应该很棒。

事实证明我的猜测。做好的剁椒,味道真不错。辣辣的,夹着浓浓的蒜香味,下饭又开胃。炒菜、蒸鱼或者拌面极受欢迎~~

Steps to make 蒜香红剁椒

  • 1.准备好新鲜红辣椒。
  • 2.准备好新鲜大蒜。
  • 3.辣椒不要用水洗,用水拧干毛巾反复搽净;剁成碎块备用。
  • 4.大蒜剥掉外皮。
  • 5.剥好的蒜瓣剁成碎粒。
  • 6.辣椒和蒜粒放入大碗中。
  • 7.加入食盐(盐的使用量比炒菜要多许多),充分拌匀。
  • 8.准备一个干净无水的玻璃瓶;将拌好的剁椒装入瓶子里(边装边将瓶子磕动数次,使辣椒装的紧实些)。
  • 9.装好的剁椒在表面撒上一层盐。
  • 10.撒好多盐,基本上覆盖住剁椒。
  • 11.用保鲜膜覆盖瓶口,用皮筋或者细绳扎紧。
  • 12.盖上瓶盖,以保证密不透风(最好是存放于冰箱中)。腌好的剁椒半月后食用味道更好。
