【腌鬼子姜】---一道清脆爽口腌制小菜
鬼子姜的学名叫菊芋,从名字上可知是菊科的植物,俗名叫洋姜,原产北美,十七世纪的时候传入我国,鬼子姜适应性极强,抗干旱、抗病虫,几乎没有什么害虫来吃它。现代研究发现:用鬼子姜提取菊糖,可治疗糖尿病,其对血糖具有双向调节作用,即一方面可使糖尿病患者血糖降低,另一方面又能使低血糖病人血糖升高。
鬼子姜,是一种可食用的根茎类蔬菜,普遍吃法是多用来腌制成咸菜。初冬季节,鬼子姜上市,鬼子姜的价格很便宜,买回来洗干净了,晾干后用盐腌了,再添加甜面酱、酱油腌起来,过个二十几天就可以食用了,吃时改刀切片或切丝,是早餐很好的佐菜。

  • 1.鬼子姜用水浸泡洗净,洗净的鬼子姜将其放在通风阴凉处风干
  • 2.甜面酱500克、盐150克、糖80克、白酒100克、生抽150克、花椒10克、大料10克,各种调料备好
  • 3.花椒和大料加水煮开后晾凉备用
  • 4.将鬼子姜放入咸菜坛中
  • 5.再依次加入甜面酱、盐、糖、生抽、白酒,最后将晾凉的花椒大料水倒入坛中
  • 6.密封腌制20天即可取出食用
