香菇板栗烧子鸡

  • 桂皮一段
  • 鸡精少许
  • 冰糖少许
  • 姜片4-5片
  • 香叶2片
  • 丁香少许

Steps to make 香菇板栗烧子鸡

  • 1.选用上好的走地童子鸡,切块焯水,去掉血沫。
  • 2.焯鸡的同时 准备好配料。香菇打米字花刀,切姜片,香菇蒂切碎,小葱打结,准备桂皮、丁香、香叶
  • 3.鸡焯好后取出备用,锅中放少许底油,加适量冰糖,一定要小火哦。
  • 4.加入冰糖后铲子不停搅动,待冰糖完全融化后开始起大泡,马上下入焯好的鸡块
  • 5.鸡块入锅立即翻炒,糖色开始显色后……
  • 6.加入香叶、桂皮、丁香翻炒出香味……
  • 7.加入香菇蒂碎、姜片、小葱翻炒,加料酒烹香(全程不加花椒、八角)
  • 8.所有材料烹香后,加入没过鸡的水,加生抽一勺,老抽小半勺,蚝油半勺,鸡精适量(我没有加盐,咸度已经够了)开始炖煮
  • 9.水开后下入板栗、香菇,转小火炖1小时
  • 10.1小时候后所有食材已经成熟,转大火收汤汁,待汤汁粘稠后关火。
  • 11.装盘上桌啦
