京酱肉丝的另一个版本,猪肉丝换成了鸡丝,美味依旧,风味独特,唇齿间是浓浓的老北京风味~~~

  • 淀粉少量
  • 甜面酱1匙
  • 1匙
  • 香油1匙
  • 酱油1匙
  • 料酒1匙
  • 胡椒粉少量

Steps to make 京酱鸡丝

  • 1.鸡脯肉切成细丝,加入少许淀粉、酱油、料酒、胡椒粉,腌制20分钟左右。
  • 2.葱姜切丝或片泡入水中成为葱姜水(目的是省去炒菜前炝锅的步骤)。
  • 3.甜面酱中加少许糖和香油拌匀,热水上锅蒸5分钟左右,取出备用。
  • 4.热锅中加入适量食用油,油热后下入肉丝,划散炒熟盛盘。
  • 5.在底油中倒入蒸好的甜面酱略炒,再倒入葱姜水不停搅拌,直到酱汁粘稠。
  • 6.最后倒入炒好的肉丝翻炒,使肉丝均匀地挂上酱汁即可。
