柠香酸甜红烧猪大排

Steps to make 柠香酸甜红烧猪大排

  • 1.猪大排买回来用清水清洗干净,再用清水浸泡10分钟左右出血水。
  • 2.沥干水备用。(猪排要用肉锤两面敲打一下,我买的时候,顺便让摊主帮我敲打好了。)
  • 3.姜切丝,葱一部分打结备用,一部分切末备用。
  • 4.用到的调料:日本白葡萄酒,柠檬。
  • 5.鸡蛋一颗。
  • 6.猪排放入干净的大容器里,依次加入姜丝,葱结,白葡萄酒,黑胡椒粒,橄榄油1勺,盐1勺半,放入柠檬2片,最后打入鸡蛋。
  • 7.所有的调料一起搅拌均匀后,放入冰箱腌制半个小时入味。
  • 8.准备生粉,腌好的猪排拍上生粉备用。
  • 9.锅热注油,冒青烟时依次放入大排放油锅里炸至两面金黄时备用。
  • 10.沥干油备用。
  • 11.另起锅,放1勺油,放入葱结,姜末,八角爆香。
  • 12.关火依次倒入老抽,冰糖,生抽,白葡萄酒和2片柠檬,再用腌制猪排的腌料加水一起倒入锅内。(刚好用到半个柠檬的量。)
  • 13.依次加入炸好的大排。
  • 14.全部放入盖盖大火烧开。
  • 15.转中火焖煮约20分钟左右,最后收汁撒上葱花即可。
