翻毛五仁月饼
翻毛月饼,在我小的时候,是一种很奢侈的食品,所以一直以来对它有种特殊的记忆,其实就是酥皮月饼,但那个时候不很常见常吃到。正好做五仁月饼剩了馅料,今天做一把翻毛月饼过过瘾。

  • 五仁馅300克
  • 80克
  • 白糖15克
  • 低筋面粉100克
  • 猪油90克
  • 食盐2克

Steps to make 翻毛五仁月饼

  • 1.水油面皮:面粉150克、猪油40克、水80克、食盐2克、白糖15克;将水油面皮的所有配料放一起揉成光滑面团
  • 2.水油面团盖保鲜膜室温下放置25分钟
  • 3.油酥:低筋面粉100克、猪油50克;将油酥所有原料放一起揉至面团光滑,盖保鲜膜室温下放置25分钟
  • 4.将水油皮和酥皮都分成均等8个小圆球
  • 5.取一块水油皮压成圆形,包上油酥,揉成圆形
  • 6.将圆形面团擀成牛舌状
  • 7.从一端轻轻卷起,收口朝上
  • 8.盖上保鲜膜静置15分钟
  • 9.再将醒好的面团竖着擀成椭圆形,尽量长一点,再卷起
  • 10.再盖上保鲜膜静置15分钟
  • 11.把五仁馅分成8份,这是上次做五仁月饼剩的馅,从冰箱里早起拿出已经解冻好了
  • 12.将面剂子压扁,擀成圆形
  • 13.包好馅收口,收口朝下放在烤盘中,用手轻轻压一下
  • 14.用筷子在月饼上点花纹,我还给姑娘画了2个小兔子,是那个意思,水平有限只能形似
  • 15.烤箱预热160度,烘烤25分钟
