比斯吉小面包
偶然在彩味博客里看到了艾果果爱素素分享的这款小面包,为了用上新买的潜水艇8连模,就试做了一回,结果就爱上了这因为加了熟蛋黄而不同的细腻柔软的小面包!这款面包口味清淡,可以涂抹果酱或奶油吃。
据说比斯吉是美国南部传统食物,特点是用泡打粉使面包体充盈,那么这个小面包就不是正宗的比斯吉了,但是口感超棒,哈哈!

Details of ingredients

  • 高筋面粉200g
  • 低筋面粉60g
  • 牛奶180g
  • 熟蛋黄3个(约50克)
  • 白砂糖20g
  • 3g
  • 酵母3.5g
  • 黄油25g

Steps to make 比斯吉小面包

  • 1.三个大鸡蛋煮熟,凉后剥出蛋黄压碎
  • 2.将黄油以外的材料放进面包桶,启动“和面”程序
  • 3.程序结束后加入软化的黄油,再次启动“和面”程序
  • 4.二次“和面”程序结束后,将面团收圆,发酵至2-2.5倍大
  • 5.发酵好的面团取出排气,分割成8等份,滚圆,盖上保鲜膜,松弛15分钟
  • 6.将面团擀成椭圆形
  • 7.翻面后三折
  • 8.转90度再次擀长
  • 9.翻面后卷起,捏紧,放入模具中再次发酵
  • 10.再次发酵至2倍大,切包,在表面刷一层融化了的黄油,撒上一层粗白砂糖
  • 11.放进预热好的烤箱中下层上下火140度烤30分钟
