蛋黄豆沙月饼
最近温度略降,月饼可以开始烤起来了! 大大的咸蛋黄,香甜的豆沙,自己做的就是好吃,不油不腻,干净卫生!家里的吃货有一个是不爱吃甜食的,可是月饼里面有金奇香咸蛋黄啊,裹在豆沙馅里面整体口感甜甜咸咸的,咬了一口之后就停不下来,说比外面买的好吃,蛋黄也实在,还墙裂要求带几块去单位和同事分享,哈哈。

  • 奶粉8g
  • 转化糖浆115g
  • 枧水3g
  • 40g

  • 蛋黄10个

Steps to make 蛋黄豆沙月饼

  • 1.先把蛋黄泡油2-3天,让蛋黄回油。
  • 2.放烤箱170度烤8-10分钟,然后取出放凉。
  • 3.转化糖浆、枧水、油和盐先放一起搅拌。
  • 4.然后倒入面粉和奶粉,搅拌。
  • 5.揉成团,密封静置1小时。
  • 6.趁这个空隙处理馅料:蛋黄包入豆沙馅儿。
  • 7.滚圆,每个约45g。
  • 8.取出静置好的面团分割成约30g一个。
  • 9.下面开始正式包月饼!饼皮捏成中间厚四周薄。
  • 10.包入豆沙蛋黄馅儿,用虎口慢慢往上推,滚圆。
  • 11.粘上稍许面粉。
  • 12.模具撒面粉,转一圈,倒出多余的粉。
  • 13.月饼球放入模具,可以用手掌略压平一点点。
  • 14.压出花型,慢慢提起模具。
  • 15.看上去还不错哈。
  • 16.送入预热好的烤箱200度烘烤约5分钟。
  • 17.蛋黄液打散。
  • 18.从烤箱取出月饼,在表面刷上薄薄一层蛋黄液,侧面不用刷。
  • 19.接着再烤15分钟左右出炉即可。
  • 20.成品。当然你也可以选择各种你喜欢的图案进行制作,我所选择的花纹都比较传统常见,寓意也比较朴实美好,提前祝大家月饼节快乐啦!
