豆沙蜜豆月饼

  • 太古转化糖浆70g
  • 花生油17g
  • 枧水2g

Steps to make 豆沙蜜豆月饼

  • 1.碗里倒入转换糖浆花生油枧水。
  • 2.用蛋抽搅拌均匀,一定要拌匀。
  • 3.筛入低粉。
  • 4.用手揉或用刮刀拌成团,放入保鲜袋室温松弛2-3小时。
  • 5.蜜豆和豆沙称重43克。
  • 6.揉搓成团。
  • 7.把醒好的面团分成10份。
  • 8.每份19克左右。
  • 9.取一个面团压扁成圆形放一个豆沙蜜豆馅。
  • 10.利用虎口往上推,均匀的包裹好。
  • 11.轻轻薄薄的滚上一层玉米淀粉。
  • 12.放入月饼模具里。
  • 13.按压出一个个月饼坯,入烤箱前喷一点水。
  • 14.烤箱提前预热,180℃中层烤5分钟左右,月饼定型后拿出。
  • 15.蛋黄加一点点清水搅匀。刷蛋液用软毛刷不要用硅胶刷。
  • 16.软毛刷在碗边沘去多余的蛋黄液,在月饼上薄薄的刷一下(一定是薄薄的,蛋黄液太多图案会糊不清晰)
  • 17.重新放入烤箱180℃中层15分钟左右(时间温度仅供参考)
  • 18.刚烤好的月饼很软不要移动,等凉了会变硬,彻底冷却后密封保存等回油。
  • 19.两天就回油了,回油后的月饼颜色更漂亮!
  • 20.切开~开吃!
