只为他做——椒香小炒鸡
这个菜是有一次和嘎嘎同学去青年餐厅点到的一款,改良版的四川菜。不过花椒的麻味还是很重的。嘎嘎同学很喜欢这鸡肉的口感,外焦里嫩,麻辣十足。吃着很带劲。我看他每次去都点这个菜。所以十一这几天决定在家尝试着做做看。我也有所改良哦,整个的花椒没有放,只用花椒粉来腌鸡肉了。嘎嘎同学不太爱吃花椒,所以我做的这款《椒香小炒鸡》应该属于香辣味的。也很好吃哦。

Steps to make 只为他做——椒香小炒鸡

  • 1.1:准备好食材
  • 2.把琵琶腿中的鸡骨头剔出,把鸡腿肉切成大小适中的肉块,放入碗中。依次放入胡椒粉;花椒粉;五香粉;盐;鸡精;糖;嫩肉粉;黄酒和鸡蛋清。搅拌均匀,腌制15分钟。备用。
  • 3.平底锅中放油,开大火热油,放入腌制好的鸡腿肉。用小铲子不停翻炒。多煎会儿哦。鸡肉表面颜色变成焦黄色,就出锅吧。
  • 4.看看鸡肉的颜色挺好看吧。把柿子椒切丁。葱姜蒜切片。备用
  • 5.炒锅放入油,油微热后放入葱姜蒜和辣椒酱。
  • 6.放入少许的花椒油。
  • 7.翻炒一会,放入柿子椒丁。继续翻炒,放入适量的生抽,不要放多,一点点就好。在放一点点白糖增味。
  • 8.把之前炸好的鸡腿肉放入炒锅。继续翻炒片刻。熄火起锅,成盘。
