Steps to make 熘肉段

  • 1.准备好食材。
  • 2.葱切成葱花备用,辣椒切棱状备用。
  • 3.肉切小大小均匀1.5厘米的小块即可,洗净控水,加入适量的淀粉与水搅拌均匀,(边加水边搅拌)。
  • 4.搅拌成酸奶状,使每块肉丁都被包裹住。
  • 5.热锅加入到适量的油,多些。油开之后一块一块放入肉丁,放入之后不要动,待全部放完之后静置一会,等酥肉定型用工具一敲就会散开。
  • 6.定型。
  • 7.捞出控油。
  • 8.全部捞出。
  • 9.辣椒放入过油10秒,不要太久,否则会很软。
  • 10.二次复炸,这样可外酥里嫩。
  • 11.炸至金黄捞出控油。
  • 12.调汁:将锅内多余的油倒出,刘留小部分油,加入十三香,葱花,酱油炒香。
  • 13.提前准备好的淀粉水,里面加入适量的盐与鸡精。
  • 14.倒入锅中,接着倒入炸高好的酥肉与辣椒翻炒一下即可。
