Steps to make 锅塌豆腐

  • 1.准备好原材料
  • 2.红、黄柿子椒切成颗粒状
  • 3.生姜、大蒜、香葱切成末
  • 4.豆腐切成5毫米左右厚度的片,我今天没买到北豆腐,用了嫩豆腐,比北豆腐易碎,建议用北豆腐做,所以材料里写的是北豆腐
  • 5.豆腐两面稍微沾一点淀粉
  • 6.鸡蛋里加入适量盐搅拌均匀,沾了淀粉的豆腐裹上鸡蛋液
  • 7.锅烧热加入适量油烧到四成热
  • 8.均匀铺上豆腐中火煎,一面煎黄后晃动锅翻一面,将两面都煎黄,煎好出锅待用,我分两次来煎的
  • 9.锅里加入适量油,爆香柿子椒粒、葱姜蒜末
  • 10.加入适量自制剁椒、生抽、蚝油,翻炒均匀,然后加入少许开水,翻匀
  • 11.将煎好的豆腐倒入锅里轻轻翻动,翻均匀
  • 12.出锅了
