妈妈的味道-----私房四川泡菜
我是四川人,从小到大,家里的泡菜就没有断过,妈妈做泡菜(我们也叫酸菜)一直味道好棒,记得小时候,因为喜欢我家里泡菜的味道,邻居阿姨还经常到我家里来要呢。

泡菜我曾经发过一次日志,当时是在网上找的配方,但做出来觉得味道不是很喜欢,过不了多久就倒掉了,上次爸爸妈妈过来,妈妈给做过一次泡菜,一下就找到了四川泡菜的感觉,但妈妈做泡菜水都是凭经验,我当时也忘记了称量,就没有写成日志,后来因为自己保存不好,也倒掉了,今年爸爸妈妈过来,又给我做了泡菜水,妈妈一边放原料,我就一边用厨房秤量,这样我也有了泡菜水的配方。

泡好的泡菜,直接吃也不错,还可以加一些鸡精、辣椒油、小葱等,拌一拌,味道更棒哦。
整个制作过程非常简单,甚至比我想象的还要简单,但仍然有一些需要注意的地方。今天用泡菜来做了炒空心菜杆,味道非常棒,下饭饭好美味,保证让你多吃两碗。

  • 1.首先要将泡菜罐洗干净,为防有油,我用了新的洗碗巾。
  • 2.先用清水洗一遍。
  • 3.再加入洗洁精洗干净。
  • 4.最后用清水再充分洗净。
  • 5.准备好需要的蔬菜。
  • 6.姜切成厚片。
  • 7.将原料全部放入泡菜罐里,搅动一下,使其均匀,冰糖会慢慢融化在水里。
  • 8.放入洗干净的蔬菜,密封即可。
