  • 后腿肉350g,肥瘦3:7
  • 生抽16g
  • 老抽4g
  • 蚝油6g
  • 麻油数滴
  • 6g
  • 4g
  • 植物油20g
  • 淀粉2g
  • 36g

Steps to make 鲜肉月饼

  • 1.猪肉搅烂添加所有辅料按顺时针方向打圈10分钟左右,大致黏稠就可以放入冰箱冷藏备用
  • 2.制作水油皮:200克面粉,60克猪油,盐6克,温水100克。和面至出膜,静置30分钟
  • 3.制作油酥,油酥:猪油100克,面粉200克,混合后充分和均匀盖保鲜膜放冰箱冷藏30分钟
  • 4.水油皮和油酥各平均分成16份,搓圆备用。
  • 5.取水油皮摁扁,放入油酥,像包汤圆一样封口
  • 6.依次包包,封口朝下
  • 7.封口朝下摁扁
  • 8.擀成长条装
  • 9.卷起来
  • 10.竖着放擀成长条状
  • 11.再次卷起来
  • 12.依次卷好盖上保鲜膜静置15分钟
  • 13.面团擀开,包入肉馅,用虎口挤压封口,依次码好,放入预热好的烤箱中,180度10分钟,翻面再烤10分钟出炉
  • 14.出炉冷却,稍有余温时品尝,滋味棒棒哒
