拔丝蜜红薯

Steps to make 拔丝蜜红薯

  • 1.红薯去皮,切滚刀块。
  • 2.红薯焯水,变色后捞出。
  • 3.过冷水捞出控干。
  • 4.撒上一层干淀粉。
  • 5.锅中加入色拉油,油温六成热时下入红薯开始炸制,先中火,先不要翻动,过一会稍微定型后再翻动。
  • 6.炸到上色后改小火慢慢炸制,把红薯里面的水份靠干,用勺子翻动时能感觉到有一层硬壳了,金黄焦脆就可以捞出来。
  • 7.另起锅,加一手勺清水,一手勺白糖开始熬煮糖色。
  • 8.先大火烧开熬煮,这个糖浆是大泡泡的状态。
  • 9.边熬边搅拌,待糖浆变成浓密的小泡泡时改小火,继续搅拌熬煮。
  • 10.最后糖浆变成香油色时关火或锅离火,利用锅中的余温挂糖浆。
  • 11.迅速的下入红薯,翻勺挂匀糖浆。
  • 12.装盘,待稍凉时,就能拔出糖丝。
  • 13.成品图。
