甜甜圈蛋糕
对于烘焙新手来说,做蛋糕最怕的就是分蛋打发了。那索性我们就把全蛋的海绵蛋糕做到极致吧!换一个模具,换一种心情,让蛋糕也过节一样美美的。唯一要注意的就是面粉筛入蛋糊后,上下翻拌的动作,要轻快而且温柔,切忌划圈搅拌,这样才能保证蛋糊中的空气不会消失得太多。

  • 带壳鸡蛋3个(每个60克)
  • 低筋面粉90克(蛋糕粉)
  • 牛奶15克
  • 黄油45克
  • 糖粉65克

Steps to make 甜甜圈蛋糕

  • 1.全部材料准备好,我使用的月饼粉也是低筋面粉的一种,直接用蛋糕粉也是可以的
  • 2.鸡蛋和糖粉同入打蛋盆中,也可以将糖粉换成等量的细砂糖;此时可将黄油和牛奶用微波炉融化或者隔水融化
  • 3.用电动打蛋器先中速再低速打发,提起打蛋器,蛋糊呈丝带般缓缓垂落,层层叠叠,纹路10秒钟不消失,打发结束;如果将打蛋盆坐在温水中,打发会更容易
  • 4.将面粉筛入蛋糊中
  • 5.用“J”字方向,上下翻拌均匀,无干粉状即可
  • 6.将晾凉的黄油牛奶液顺着盆壁倒入面糊中
  • 7.继续用翻拌的手法将黄油与面糊充分混合均匀,大概要翻拌50下左右,动作要轻柔
  • 8.将蛋糕糊用小勺舀入甜甜圈模具中
  • 9.12连模和6连模刚好装满
  • 10.将模具分别送入预热好的烤箱中层,150度,20分钟左右
  • 11.出炉后,端起模具轻震两下,无需倒扣,晾凉后自然脱模
  • 12.纹路清晰,看上去很美
  • 13.做好原味基础的,可以增减材料,任意替换做出创意蛋糕啦
