广式红糖枣泥豆沙月饼
去年做了不少月饼今年感觉有点懒,有点不想动的感觉。不过离中秋还有点时间,到时候再研究。不管做不做预热总是要的,自己炒豆沙再自己做月饼折腾好久。好在味道很不错,有喜欢的朋友可以研究研究

  • 碱水5g
  • 转化糖浆210g
  • 咸蛋黄16个
  • 花生油70g
  • 红糖枣泥豆沙1200g
  • 高度白酒少许
  • 蛋液1个

Steps to make 广式红糖枣泥豆沙月饼

  • 1.把咸蛋黄放置烤盘上用高度白酒喷一下,在烤箱里烤制8分钟【 温度设定180度上下火中层,温度与时间请根据自己烤箱特性做出适当调整 】烤好后拿出冷却
  • 2.把转化糖浆倒入盆中加入花生油及碱水打搅至乳化
  • 3.倒入中粉用刮刀稍微搅拌搅拌,套上一次性手套稍微揉捏均匀。盖上保鲜膜常温放置40分钟
  • 4.把咸蛋黄与豆沙一起称重一共88g作为内馅
  • 5.​把咸蛋黄包入红豆沙之中
  • 6.红豆沙包好咸蛋黄后,把饼皮分成16个每个在37g。饼皮与馅料是37:88一共125g,套上一次性手套揉圆压扁饼皮慢慢包好
  • 7.全部包好后拿少许的手粉洒在月饼团上面,稍微翻转下使其全部沾上少许的面粉达到不粘境界。
  • 8.根据喜好选择花型,把团放入模具之中压制好
  • 9.​烤箱提前预热190度,上下火中层先烤制8分钟。拿出刷上蛋液,再烤制20分钟即可出炉【时间与温度请根据自己烤箱特性做出适当调整】
  • 10.刚出炉的月饼切勿马上拿动,损坏其型。
  • 11.待稍微冷却后在转移
  • 12.那么美味好吃的月饼就做好了
  • 13.月饼烤好最好密封放置回油。才能更美味​​​​
