瑶柱鸡蛋羹

Steps to make 瑶柱鸡蛋羹

  • 1.先用开水煮熟豌豆捞出备用。
  • 2.瑶柱洗净倒入3克黄酒,浸泡片刻。
  • 3.往瑶柱里加少许清水。
  • 4.旺火上笼蒸10分钟。
  • 5.蒸瑶柱的时候准备调料,往碗里倒3克蒸鱼豉汁。
  • 6.然后在炒菜的手勺里倒入少许橄榄油炸香葱花。
  • 7.把炸香的葱花趁热倒入豉油碗里备用。
  • 8.把蒸好的瑶柱从锅中取出,用汤匙碾碎。
  • 9.把瑶柱碾压成茸,取出五分之一备用。
  • 10.然后把大部分瑶柱连同蒸瑶柱的汤汁一并倒入一只大碗里,再把两枚鸡蛋打在碗中。
  • 11.在碗里加入100 ml的清水搅打均匀。
  • 12.然后把搅打好的蛋液倒入炖盅,盖上炖盅的盖子,上笼旺火蒸10分钟。
  • 13.蒸10分钟后打开盖子,在蛋羹上面撒上煮熟的青豌豆和瑶柱丝,再盖好盖子蒸两分钟取出。
  • 14.在蛋羹上浇上葱油豉汁便可食用。
