新手自制广式五仁月饼
月饼其实是9月中旬就做了,一直没发菜谱。今天中秋,发个月饼应应景*这是我第一次做月饼,很是笨拙。做好的月饼回油有点慢,三天才回油,饼皮还是有点硬,吃起来还可以。毕竟,自己做,馅料选的都是好的,难吃不到哪去*

  • 普通面粉200克
  • 转化糖浆150克
  • 枧水3克
  • 玉米油30克
  • 紫皮花生60克
  • 核桃60克
  • 腰果40克
  • 开心果60克
  • 瓜子仁60克
  • 蔓越莓干40克
  • 白芝麻20克
  • 白砂糖80克
  • 熟糕粉约120克
  • 80克
  • 蛋黄1个
  • 清水1大匙

Steps to make 新手自制广式五仁月饼

  • 1.转化糖浆加枧水搅匀,加玉米油搅拌成乳状。家里没有花生油,我用玉米油代替的。
  • 2.加入面粉,搅拌成团,置冰箱冷藏备用
  • 3.各种坚果烤熟,切碎,拌匀
  • 4.蔓越莓干切碎
  • 5.坚果和蔓越莓干混合,加入白糖,熟糕粉,拌匀
  • 6.加入玉米油,拌匀,再加入水抓捏,馅料能够攥成团就行了
  • 7.我用的63克的模具,饼皮23克,馅料40克
  • 8.取一块饼皮按扁,放入馅料
  • 9.由底下一点点向上推,边推边转
  • 10.封口
  • 11.模具里刷一层面粉防粘,放入包好的月饼
  • 12.按压,脱模,表面喷水,入预热好的200度烤箱,烤5分钟后取出,表面刷一层蛋黄水(一个蛋黄+一大匙水混匀),继续入烤箱烤15分钟左右
  • 13.刚烤好的样子,有点烤过头了,此时月饼很硬。冷却后密封放置,回油后再吃。
