家乡特色风味的腊肉炒豆丝
一年一度的春节即将到来,每次春节回家豆爸最特别想念豆丝的味道,加点腊肉炒炒更美味。
现在市面上又开始有豆丝买了,新鲜出锅的豆丝包点咸菜可沾点糖,可以直接吃,搭配点配菜炒一炒又是另一翻风味。
现在身处异地,找不到新鲜的豆丝,想念时可以用干豆丝替代,味道虽不如新鲜的好吃,但依然美味

  • 腊肉2~3两
  • 几滴
  • 老抽半勺

Steps to make 家乡特色风味的腊肉炒豆丝

  • 1.干豆丝用冷水泡30分钟左右,泡好的豆丝沥干水份备用
  • 2.青蒜洗净后,随意切成5cm左右的段(蒜白和蒜叶分开),腊肉切片(肥瘦分开)
  • 3.锅中加少许油,然后将肥肉下锅,小火慢慢翻炒
  • 4.待肉炒至两面金黄色时,将蒜白段放入锅中翻炒
  • 5.待闻到蒜白炒出香味后,倒入沥过水份的豆丝,快速翻炒
  • 6.大约炒1分钟左右,豆丝也慢慢变软时,加入蒜叶、瘦肉、3克左右盐、半勺老抽和半勺醋,继继快速翻炒,等盐、老抽、醋与豆丝炒拌均匀后即可关火出锅。
