可可双色冰皮月饼
冰皮月饼名称是噱头其实部分原料是糯米,糯米做成的月饼外观呈白色的, 制作特点是无需烘烤,工艺简单,节约能源。 口感酥软滑爽,略有弹性,色彩洁白如雪。 这款冰皮月饼是咸口的,打破甜馅的冰皮月饼的口感,特别惊艳。

Steps to make 可可双色冰皮月饼

  • 1.准备材料,我准备都是成品馅料,个人有点小懒,追求自制馅料的也可以自制
  • 2.先来制作肉松蛋黄馅料,先把蛋黄蒸熟,是熟透,大概15分钟
  • 3.再把蛋黄全部捣碎,有点颗粒感就行
  • 4.再把辣肉松倒入碎蛋黄中,混合一下
  • 5.再把沙拉酱到入其中,搅拌均匀成团,喜欢吃干一点的馅,沙拉酱少放点
  • 6.辣肉松蛋黄馅料是25克,比例是1:1
  • 7.再来制作冰皮月饼皮,把预拌粉倒入盆子中再加入80度的热开水
  • 8.搅拌均匀无颗粒,冷却一下,再拿出来揉至光滑
  • 9.取出一部分加入要添加可可粉,揉至均匀
  • 10.冰皮团分成25克一个。200克的粉,可以分成16个
  • 11.备好炒熟的糯米粉或者买熟糕粉,可以开工了
  • 12.要好看的花色,就把有颜色冰皮团填入花片里,把月饼皮压成圆片填入准备的好馅料包紧(手法网上很多,大家可以参考)
  • 13.在模具里沾点炒熟的糯米粉,把月饼团塞入月饼模里,一气呵成一压,一推就完成(粉少沾点在模具,因为影响卖相,哈哈哈)
  • 14.做好的冰皮月饼,放入冰箱冷藏口感最佳。自制的冰皮月饼要尽早食用,避免影响口感和变质
