米粉蒸鱼块
蒸的鱼味道鲜美,肉质嫩滑,但往往会觉得不够入味,而且蒸的过程中会有汤汁给蒸出来,会带走鱼肉内的营养成分。今天我用粉蒸肉的做法来蒸鱼,裹了一层米粉后,肉质更加鲜嫩,味道挺好的。发出来和大家分享

  • 大米100g
  • 胡椒粉2g
  • 黄酒20g
  • 蒸鱼豉油20g

Steps to make 米粉蒸鱼块

  • 1.新鲜草鱼宰杀后清洗干净,切成1.2--1.5厘米厚的段,加葱姜丝,黄酒,胡椒粉,盐腌制5分钟。用不了一整条鱼,只要中间的几段即可。其余的做成其他口味。
  • 2.大米提前炒熟,用料理机磨成粉状。
  • 3.腌制好的鱼块挑出来,去掉腌制时的葱姜,在打碎的米粉中沾裹上米粉,沾满米粉后摆入盘中,上笼大火蒸8分钟。
  • 4.蒸好后浇上蒸鱼豉油再焖一分钟。不焖也可以
  • 5.上桌时撒上香葱碎,淋上几滴香油。
