Steps to make 苏式月饼鸳鸯饼

  • 1.将馅料中的酥油、糖粉搅拌至乳化状,然后加入糯米粉和盐搅拌均匀
  • 2.将牛奶和水煮开,加入步骤1搅拌均匀,冷却备用
  • 3.将步骤2的糯米团分割成35g/个,将豆沙分割成20g/个
  • 4.用豆沙包入糯米团备用
  • 5.将油皮材料中的高筋粉、低筋粉做粉墙状,加入糖粉、酥油水搅拌至光滑细腻状,松弛20分钟
  • 6.将油酥中的材料搅拌均匀,软硬度和油皮差不多
  • 7.将油皮分割成20g /个,油酥分割成13g/个
  • 8.用油皮包入油酥
  • 9.擀开呈长条状,然后卷起来,连续2次,松弛10分钟
  • 10.将松弛好的面皮擀开包入备用的馅料收口
  • 11.在表面刷上蛋黄,印上图案
  • 12.以上下火200/180℃烘烤至表面金黄色
