中秋佳节倍思亲   甜美“月亮”暖人心——单黄白莲蓉月饼
它是民间传说中的仙饼,是借以寄托的思念之情,由于其形状似月亮所以被叫作月饼并一代一代地传了下来。月圆年年相似,你我岁岁相盼。秋风送爽迎中秋,怎能小得了这金黄饱满的小月亮呢?

  • 奶粉5克
  • 转化糖浆75克
  • 白莲蓉750克
  • 咸蛋黄10个
  • 枧水2克
  • 花生油25克

Steps to make 中秋佳节倍思亲 甜美“月亮”暖人心——单黄白莲蓉月饼

  • 1.糖浆中加入枧水搅拌均匀
  • 2.再加入植物油
  • 3.搅拌均匀
  • 4.筛入中筋面粉跟奶粉
  • 5.混合揉匀后包上保鲜膜静置1个小时
  • 6.将皮馅比例按2:8的比例分好,试用100克的模具,比如皮是20克,馅加蛋黄就为80克
  • 7.蛋黄用植物油泡半小时去腥味,然后用170度烤5分钟至半熟出适量的油分
  • 8.用分好的莲蓉馅包住蛋黄
  • 9.取一个饼皮面团,在手掌上压扁,把莲蓉馅放在面团中间,用两只手把饼皮慢慢往上推,直到饼皮能够完全均匀包裹住莲蓉,包的时候不要露馅
  • 10.包好后拍上点面粉,方便待会脱模
  • 11.然后放入月饼模中
  • 12.直接按在铺有油纸的烤盘上,提起月饼模,压出有月饼花纹即可,然后在月饼表面喷点水
  • 13.放进预热好上下火170度的烤箱烘烤5分钟左右,等月饼花纹定型后,取出来在表面刷上蛋黄水(只刷表面,侧面不刷)
  • 14.然后再放入烤箱再烤15分钟左右至表面均匀上色即可(如果发现上色不深,中途还可再取出刷一次蛋黄水)
