椰香紫薯挞
我儿子要送朋友蛋挞,想想他送过好几个口味的了,做个什么不一样的蛋挞呢,刚好蒸好的紫薯,于是就做了这款紫薯蛋挞。浪漫的紫色送人很漂亮。
这个蛋挞没有用淡奶油,也没有用牛奶,而是用椰浆和紫薯搭配,成品既有浓浓 的椰香味,又有紫薯那一抹浪漫的紫色。颜色味道兼顾的一个蛋挞配方,值得一试的哦。

  • 紫薯250g
  • 蛋黄2个
  • 黄油20g
  • 椰浆120g
  • 玉米淀粉5g
  • 40g
  • 柠檬半个
  • 炼乳20g
  • 蛋挞皮12个

Steps to make 椰香紫薯挞

  • 1.蒸熟的紫薯切小块放入料理机中
  • 2.加入一半量的椰浆
  • 3.搅拌成糊状,搅拌后紫薯糊的颜色看起来不好看
  • 4.加入半个柠檬的汁,再搅拌一下,颜色瞬间变漂亮
  • 5.剩余的一半椰浆倒入碗里
  • 6.加糖搅拌至糖溶化
  • 7.加入炼乳
  • 8.加入蛋黄充分搅拌均匀
  • 9.过筛
  • 10.加入搅拌好的紫薯糊
  • 11.充分搅拌均匀
  • 12.倒入蛋挞皮里,8--9份满。
  • 13.烤箱180度预热5分钟,入烤箱,放下面第二层,烤20分钟左右
  • 14.烤好的蛋挞,表面可以再撒上一点椰蓉,以增加椰香味
