自己在家动手做少油少糖无添加剂的广式月饼
还没到中秋节朋友圈全部都是晒月饼,搞得我也手痒痒的,每年做完都会说明年再也不做了,辛苦忙碌几天下来实在太累,各项成本算起来也不低,还不如直接买点送朋友们,可是每年中秋即将到来之际马上忘记当时说的话,又开始捣腾各种食材忙前忙后不停地做、不停地送人。
这一周宅家里除接送孩子外,其他时间和精力都花在做月饼上,过程虽然比较繁琐、累和辛苦,每当成品出炉时辛苦与累早已抛脑后。
参烤份量:20个(63g模具)
烘焙温度:165度

  • 白砂糖200g

Steps to make 自己在家动手做少油少糖无添加剂的广式月饼

  • 1.白芸豆用清水洗净后,放水中浸泡一晚,然后剥去芸豆外表皮
  • 2.将去皮后的芸豆放高压锅中,加入适量水煮半小时左右,倒掉多余的水份然后放破壁机杯中
  • 3.破壁机选择研磨功能,启动破壁机
  • 4.2分钟左右白芸豆打成非常细腻的泥状
  • 5.将打好的白芸豆泥倒入不粘锅中
  • 6.分次加入白砂糖炒,然后分次加入色拉油炒至油完全被馅料吸收
  • 7.芸豆泥炒至不粘手出锅
  • 8.将转化糖浆倒入盆中,加入枧水、花生油搅拌均匀(转化糖浆180g、花生油60g、枧水4g)
  • 9.低筋面粉和奶粉筛入拌好的糖浆中(低筋面粉240g、奶粉15g)
  • 10.用刮刀拌均匀,盖上保鲜膜或锅盖静置半小时左右
  • 11.饼皮静置的过程中将制作好的馅料分成38g/个,共20个
  • 12.馅全部准备好后,将饼皮均匀分成25g/个,共20个
  • 13.饼皮压扁,放上准备好的馅
  • 14.将饼皮放左手,手指按住饼皮底部,右手慢慢让它往四周轻轻推,使饼皮慢慢全部包裹住馅即可
  • 15.往月饼模具内撒上少许面粉,摇晃几下后倒入多余的面粉,把包好的月饼面团放入模具中,按压模具顶部,相应花形的月饼成形,按同样的方法做剩余月饼
  • 16.烤箱上下火165度预热10分钟,放入中上层烤5分钟后拿出烤箱
  • 17.用刷子轻轻往月饼表面刷一层蛋黄水,刷完后再次放入烤箱,烤20分钟左右即可
