奶酪椰蓉月饼

  • 自制奶酪80g
  • 椰蓉120g
  • 黄油40g
  • 熟糯米粉30g
  • 鸡蛋50g
  • 面粉100g
  • 转化糖浆75g
  • 葵花籽油25g
  • 枧水1g
  • 奶粉10g

Steps to make 奶酪椰蓉月饼

  • 1.转化糖浆、油、枧水全部倒入盆里充分搅拌均匀,让它们完全融化为一体
  • 2.加入奶粉和面粉
  • 3.和成面团饧一小时左右。
  • 4.自己做好的奶酪,趁热捏散
  • 5.把馅料配方中所有食材放入盆里
  • 6.先搅拌均匀,然后用手搓成粒状,让黄油和食材充分混合,
  • 7.最后抓一下能成团即可。如果过于干散,可以用适量的牛奶或者淡奶油调整
  • 8.把馅料和好后滋润一小时左右
  • 9.、把馅料团成40克的剂子,皮分成15克的剂子,这个皮的量稍微大了一点,因为椰蓉不是太好包,而且椰蓉馅料相对较轻,40克的馅芯也比较大些
  • 10.用皮把馅料包起来。
  • 11.入模成型后放入烤盘,烤前喷水
  • 12.烤箱180度预热5分钟,入烤箱烤5分钟后拿出来刷蛋液,然后继续烤15分钟,
  • 13.烤好的月饼,放置一晚即可回油。
