自制黑豆豆腐
说起做豆腐,我小时候就很拿手。那时自己种豆子,家里有台石磨,和小伙伴们磨好浆,由我来做豆腐,煎豆腐是爸妈的事。那嫩嫩的美味豆腐,现在都没超越。
已经忘记小时候是怎么做豆腐的了。现在用原汁机磨的豆浆;也买有做豆腐的盐卤但是没用过,我喜欢用醋点。在菜市场见过这样的灰色豆腐,自己做过才知道原来是用黑豆做出来的。
自己做的豆腐量足,比买的更香哦~

Steps to make 自制黑豆豆腐

  • 1.这是用清水浸泡了一晚的黑豆,浸泡后660克,要把泡不发的黑豆拣出来不要;
  • 2.再洗干净后,加1300ml清水;
  • 3.用小勺子一点点把豆和水一起放进原汁机磨好豆浆;
  • 4.再用豆腐布过滤一次在不粘锅中;
  • 5.撇掉表面的浮沫,大火把豆浆煮开,转小火等不沸腾后再大火煮开,然后重复一次;
  • 6.关火一会儿就有一层豆皮,小时候就特别喜欢吃;
  • 7.准备好醋,点进煮过的豆浆中,轻轻搅拌两下;
  • 8.等15分钟;很快就可以豆花和水分离~
  • 9.把豆花捞入豆腐盒里;
  • 10.然后盖上纱布,用豆腐盒配的盖子轻轻压去水分;
  • 11.找个重物压在上面,约30分钟;
  • 12.豆腐就做好啦。
