    Steps to make 香辣牛肉酱

    • 1.花生一碗用水冲洗一下
    • 2.锅中放油,可以多一些,这些油一会炸完花生会全部用在辣酱里
    • 3.凉锅凉油倒入花生米
    • 4.随着油温升高,锅内出现气泡
    • 5.待气泡减少,掉了皮的花生呈现浅金色,即可捞出
    • 6.用刀切碎,不要用料理机,否则过碎容易在混合时产生糊味,影响口感
    • 7.牛肉切丁
    • 8.炸花生的油重新加热
    • 9.七成热加牛肉丁
    • 10.炸到牛肉基本没水份,捞出
    • 11.油锅中加少许辣椒酱,拌开
    • 12.辣酱是自己家做的,新鲜辣酱加盐晒干的
    • 13.拌开以后再加入剩余的辣酱
    • 14.用力按压辣酱,使其和油充分融合
    • 15.期间要不停翻动,防止糊锅。待锅中水分蒸发掉,只剩辣酱的香味时关火
    • 16.加入花生碎和牛肉丁,还加了一些原本炒好的芝麻
    • 17.翻炒均匀
    • 18.出锅
