酱香牛肉
食材:牛腱一条600克左右,老姜2块,大葱1根。
辅料:花椒5+5克,辣椒2个,茴香2个,香叶4片,桂皮2小块。
1)腌制调料:料酒2勺,老姜1块切片,大葱半根切段,花椒5克,盐5克。
2)煮牛肉调料:料酒1勺,辣椒2个,黄豆酱50克,老抽一小勺,老姜1块切片,大葱半根切段。
调料3)蘸料:生抽1勺,芝麻香油适量,白糖2克,香葱1根切末。

Steps to make 年夜饭菜谱(十七)~酱香牛肉

  • 1.牛腱买回家用冷水浸泡3~4个小时,中间换二次水;把里面的血水浸泡出来,洗净后一切二放入容器中,把调料1放入搅拌按摩均匀,盖上保鲜膜,放入冰箱冷藏一个晚上。
  • 2.冰箱取出后倒出腌制出来的水,锅内放适量的冷水,把牛腱放入锅中,加入料酒焯10分钟左右取出。
  • 3.准备好辅料。
  • 4.准备电炖锅一个,把牛腱放入加入温水,没过牛腱,把调料汁2一起倒入,加一勺料酒,煮2~3个小时,取出放入容器内,待凉后放入冰箱冷藏4~5个小时。
  • 5.切片装盘,准备好蘸汁。
  • 6.慢慢享用。
