这个东坡肘子是凭印象做的,也适当做了些调整,效果出奇的好呢,风卷残云,一扫而光。只是奇怪平时喊着要减肥、胆固醇高、血脂高的声音都不知道上哪去了。

Steps to make 印象东坡

  • 1.猪肘子烧皮去毛洗净。
  • 2.煮锅加水、生姜、料酒、胡椒粉,水开后煮2分钟捞出冲洗干净。
  • 3.用针或牙签在表面扎很多下。
  • 4.取一小碗,倒入生抽、老抽,均匀抹在肘子表面,待水气干了再抹,反复4、5次。
  • 5.上色到这个程度就差不多了。
  • 6.炒锅烧热倒入适量烹调油,5、6成热时下肘子炸。
  • 7.炸至猪皮起泡,颜色微微发焦即可,这个过程大概需要十分钟。
  • 8.准备好干调料。
  • 9.高压锅掺入足够的水,放入大葱段及步骤8的干调料,放入生抽、老抽、醋、料酒,高压锅上汽后煮50分钟。
  • 10.煮得非常软糯了。
  • 11.肘子盛盘,舀点原汤,青红椒切小圆撒在肘子上,热锅烧少许油,冒烟后浇在肘子上。
