紫薯玫瑰冰皮月饼

  • 粘米粉60克
  • 澄粉30克
  • 白砂糖25克
  • 炼乳40克
  • 牛奶200克
  • 玉米油30克
  • 紫薯馅450克
  • 手粉适量(炒熟的糯米粉)

Steps to make 紫薯玫瑰冰皮月饼

  • 1.冰皮材料准备好
  • 2.炼乳、牛奶、玉米油入盆,混合均匀
  • 3.所有粉类入盆中,与液体混合均匀
  • 4.过筛两次,去除杂质
  • 5.蒙上保鲜膜,入蒸锅,大火约30分钟左右,中途可打开锅盖,用筷子搅拌几次,防止面糊沉淀,同时也加速面糊蒸熟
  • 6.出锅后用筷子迅速打散
  • 7.稍凉后,用手揉成光滑的面团,可入冰箱冷藏一小时再使用

  • 9.取一小块冰皮面团,再取同量的紫薯泥,混合成一个紫薯面团,单独用做花芯
  • 10.将冰皮面团和紫薯泥以1:1的比例分成18份
  • 11.取一份冰皮,压成圆形扁饼,放一个紫薯泥在上面
  • 12.置于掌心和虎口之中,冰皮包住紫薯馅,成一个圆球
  • 13.模具内撒少量手粉,从第一个紫薯面团上取一小块面放在模具花片的花芯上
  • 14.将冰皮面球放在模具内
  • 15.在烤盘内放一张油纸,将模具倒扣在上面,轻压两下,然后脱模;并依次完成所有的冰皮紫薯月饼
