辣子鱼块

  • 生抽5g
  • 老抽3g
  • 干辣椒15g
  • 干花椒3g
  • 10g
  • 10g
  • 大蒜10g
  • 料酒10g
  • 玉米淀粉5g
  • 熟白芝麻1g

Steps to make 辣子鱼块

  • 1.草鱼买回来后清洗干净(草鱼太大,我只买了一半,在买的时候,店家会帮忙去除了内脏,刮去鱼鳞)
  • 2.准备好干辣椒段、干花椒、葱段、姜条、蒜片
  • 3.草鱼切小块,并放入盐、料酒、生抽、老抽和少许白胡椒粉
  • 4.搅拌均匀后腌制20分钟左右
  • 5.炸之前放入玉米淀粉拌匀
  • 6.锅中倒入较多的油,再放少许盐(可起到防溅作用)
  • 7.大火将油烧热后下入鱼块,转中火炸制,期间要用锅铲推动,如果有粘连的要分开
  • 8.直到炸至表面金黄,有点硬度即可捞出
  • 9.倒出多余的油,锅中留适量油,放入花椒爆香
  • 10.倒入干辣椒、葱段、姜条、蒜片,再撒少许盐炒出香味
  • 11.再将炸好的鱼块倒入,翻炒片刻关火
  • 12.撒入一勺熟白芝麻炒匀即可出锅
  • 13.无比开胃的辣子鱼块可以开吃啦,冷热皆可哦
