芸豆肉松酥皮月饼
时光如梭,感觉就是一转眼的功夫,一年一度的中秋节就又到了。中秋节总是会做不同口味的月饼,今年的中秋自然也不例外,先做一款苏式的酥皮月饼热热身。这款月饼是芸豆馅和肉松的结合,因为芸豆没有特殊的口味,是非常百塔的馅料,用它搭配肉松,一点不会掩盖肉松的香味,而且没有太多的糖,皮又很酥,老人孩子都特别喜欢。

Steps to make 芸豆肉松酥皮月饼

  • 1.芸豆提前用水浸泡至软后压力锅压10分钟
  • 2.把芸豆用料理机打成糊,然后加黄油和糖炒成团
  • 3.把豆馅晾凉放入肉松中,抓拌成馅料。
  • 4.和好水皮和油皮,盖盖饧一小时左右。水皮配方:面粉200g、黄油60g、开水80g。 油皮配方:面粉100克,黄油50克
  • 5.把水皮分成20克的剂子,油皮分成10克的剂子
  • 6.水皮压扁包住油皮,然后擀成长形,之后再卷起来,卷好的剂子饧几分钟,然后再擀成长形,卷好,之后再重复一次擀长卷起来的动作。
  • 7.总是卷、擀3次,最后卷好
  • 8.然后酥皮盖上保鲜膜饧20分钟。把馅料分成60克一份,团成圆形。
  • 9.把面皮擀开,包入馅料
  • 10.全部包好放入烤盘中,表面用牙签扎几个小洞,刷上蛋液。扎小洞是为了防止烤的过程中鼓涨起来造成破裂
  • 11.烤箱170度预热5分钟,然后放上面第二层,烤15分钟.
  • 12.烤好的的酥皮芸豆肉松月饼,皮酥馅香,老少皆宜的一款月饼
