  • 糯米粉20g
  • 橄榄油30g
  • 面粉100g
  • 转化糖浆75g
  • 花生油25g
  • 奶粉10g

Steps to make 桂花红豆蓉月饼

  • 1.红豆加冰糖用压力锅煮烂,
  • 2.料理机打成糊后放入炒锅炒,炒的成团时加入适量的橄榄油
  • 3.继续翻炒至油完全吸收再加一次油。
  • 4.油完全吸收后放一点熟糯米粉,加糯米粉是为了馅料稍微筋道一点,不加也可以,
  • 5.加了粉后炒均匀再最后加一次油,翻炒至油被吸收关火
  • 6.馅料晾凉后加入糖桂花。晾凉再放糖桂花,可以避免热气把桂花的香味带跑
  • 7.翻拌均匀即可作为馅料使用。
  • 8.把转化糖浆、花生油和枧水全部倒入盆里,充分搅拌至完全融合为一体的液体
  • 9.放入面粉和奶粉
  • 10.和成面团后,盖上保鲜膜饧1---2小时。
  • 11.馅料分成48克的剂子,面皮分成15克的剂子
  • 12.面皮压扁放入馅料,用拇指和食指一起推着包严实,
  • 13.模具中撒适量的熟糯米粉,入模成型。
  • 14.全部做好放入烤盘。烤前喷水,
  • 15.烤箱180度预热5分钟,入烤箱,上面第二层
  • 16.烤5分钟表面会定型,取出来刷一层蛋液然后继续烤15分钟即可
  • 17.刚刚烤好的月饼,有的有点裂口了,没关系,放置10分钟,裂口就自然愈合啦。
  • 18.放置一晚上,就回油了,面皮很软,馅料也是软糯香甜的
