青团界的网红非【咸蛋黄肉松青团】莫属,有些人为了吃上一个网红青团,排队3小时也愿意,与其这样浪费时间,还不如自己动手丰衣足食,因为做法一点也不复杂。
一般的青团外皮会选用艾草汁做成,找不到艾草也可以用菠菜代替,一样很好吃。青团出炉后,色泽会变得很光滑,口感软糯Q弹,甜而不腻,肥而不腻,吃一口就爱上!

Steps to make 咸蛋黄青团

  • 1.菠菜叶加入适量水,用搅拌机打成汁备用。
  • 2.咸蛋黄刷白酒后,入烤箱,180度烤10分钟,把咸蛋黄烤熟。
  • 3.把咸蛋黄放入盆中碾碎加入肉松和沙拉酱拌匀。
  • 4.揉成20克一个的小球备用。
  • 5.25克澄粉放入盆中,倒入25克开水用筷子迅速搅匀。
  • 6.另取一个盆,加入菠菜汁,200克糯米粉和35克粘米粉。
  • 7.把几种食材混合揉成光滑的绿色粉团,盖好保鲜膜防止风干。
  • 8.平均分成30克一个的小团。
  • 9.取30克面团,揉圆按扁,放入揉好的馅团。
  • 10.用虎口收口,慢慢揉圆,成型。
  • 11.全部包好,揉圆,青团下边垫油纸防粘。
  • 12.锅里先把水烧开,再把蒸屉放上去,中火蒸15分钟。
  • 13.出锅,趁热刷一层熟油哦。
