今年买的咸鸭蛋黄品质不错,就特意多买了点,方便用来做各种蛋黄月饼。今天是把红豆沙和莲蓉搭配一起,再加上咸蛋黄,这样做出来的月饼,吃起来香甜,并且有层次感,切开后颜色也不同,看起来蛮有食欲的。而且蛋黄健脑益智,特别适合我们的孩子们。

Steps to make 红豆莲蓉蛋黄月饼

  • 1.炒好的红豆沙和莲蓉馅,取需要的量。
  • 2.把豆沙分成45克的剂子,莲蓉分成25克的剂子,加一个咸蛋黄,总重量是85克,因咸蛋黄的大小不太一样,总重量用其他馅料调整成一致
  • 3.先用莲蓉馅包裹住咸蛋黄
  • 4.再用红豆沙包裹一层
  • 5.团好备用
  • 6.转化糖浆、花生油、枧水全部倒入盆中,充分搅拌均匀使其完全融合
  • 7.加入面粉和奶粉
  • 8.和成面团盖上保鲜膜饧1小时。
  • 9.把面团分成30克的剂子
  • 10.面团压扁放入馅料
  • 11.用推的手法一点点往上推包,推的时候要均匀的推,让面皮薄厚一致,直到完全包严实
  • 12.模具中撒熟糯米粉,入模成型。
  • 13.放入烤盘,烤盘喷水,
  • 14.烤箱180度预热5分钟,入烤箱烤5分钟
  • 15.烤5分钟,拿出来刷一层蛋液,然后继续烤15分钟出炉
  • 16.烤好的月饼,这个馅回油很快,基本是半天就回油了。
