海派什锦炸酱面
李少红导演说:“一千个人心里有一千个版本的红楼梦”,我想说每个家庭也都有一碗自己的“炸酱面”~~~不管正宗与否~~是你那碗“面” 就对啦!!由于某白坚持不吃“肉糜”的原则,我们家的肉酱都是切小丁的 卡卡~~

    Steps to make 海派什锦炸酱面

    • 1.加少量的油,中小火,炒熟花生米,在一旁晾凉备用。
    • 2.三分肥七份瘦的五花肉,切成四方小丁~~清水冲洗后,稍微加一点料酒腌制一会,茭白土豆胡萝卜和新鲜香菇豆腐干也切成差不多大小的小丁。
    • 3.热油爆香大葱段和姜片,再加入八角,香叶,桂皮。
    • 4.加入肉丁,充分的把肥肉部分的油煸出来。
    • 5.和一小把花椒。
    • 6.依次加入土豆胡萝卜。
    • 7.茭白丁.。
    • 8.豆腐干~~~。
    • 9.稍微炒均匀后即可加入一大锅水,基本高度和食材平行。因为要多炖一会。
    • 10.水烧开后,转小火,这时适量加入一些老抽 上色,按照个人喜欢的颜色加入就可以,我喜欢红红的颜色 所以加的不多 大约3调羹左右。
    • 11.冰糖...
    • 12.再加入适量的豆瓣酱。
    • 13.再加入少许料酒,搅拌均匀后,盖盖小火焖45分钟左右即可,最后开大火收汁,因为土豆容易沾底,最后再旁边小心的用锅铲翻动,汤汁多少按照个人喜欢决定就好。
    • 14.因为要拌面 我特意多留了些汤汁,最后关火加鸡精就可以出锅啦!!
    • 15.煮熟手擀面后,捞起沥干水分,放入冷水加冰块的碗中,静置1分钟,等到面变的弹牙可口时捞出和酱拌匀就可以开吃啦!!
    • 16.吃的时候再拌入香香滴花生米~~那个美哦~~~~
