樱桃双皮奶
双皮奶是一种著名的粤式甜品,甘香嫩滑,别具一格。上层奶皮甘香,下层奶皮香滑润口。香气浓郁,入口嫩滑,让人唇齿留香。双皮奶也是广东甜品店的镇店之宝,一年四季都可以吃,因为可热、可冷,还能吃冰的。再加上自己喜欢的樱桃果干,乃是甜品之宝。

  • 白砂糖30克

Steps to make 樱桃双皮奶

  • 1.准备好所有食材,牛奶400ml,蛋清2个,樱桃果干20克、白砂糖30克;PS:牛奶要全脂牛奶哦。
  • 2.牛奶煮到80度立刻关火拿出;PS:牛奶不要煮沸哦;
  • 3.把煮过的牛奶倒入碗中,静放凉,待用;
  • 4.利用等待牛奶放凉的时间,鸡蛋把蛋清和蛋白分开
  • 5.白砂糖30克加入蛋清中,拌均;
  • 6.这时候牛奶放凉已经形成一层牛奶皮,划一个小口,把牛奶倒入蛋清碗中;PS:沿着碗边划口,然后慢慢倒出牛奶,牛奶底部的一层不要倒出
  • 7.蛋清和牛奶拌均,用滤网过滤;PS:过滤可以去蛋泡、蛋清凝固物,这样的双皮奶才顺滑。
  • 8.隔水放入冷水锅,大火煮沸,转为小火蒸20分钟,关火之后留锅中焖5分钟;PS:防止水蒸气流入碗中,用厨房蒸纸盖上面,防止水滴下。
  • 9.起锅,加入樱桃果干,顺滑爽口的双皮奶就好了。PS:冬天吃热,夏天吃冰的话,放入冰箱想吃的时候取出。
