Steps to make 红烧牛肉面

  • 1.牛肉洗净切块,清水浸泡,我浸泡了4小时,每过一个小时换一次水;
  • 2.配料准备;
  • 3.锅中加冷水放入牛肉,倒入料酒和姜片,大火加热至沸腾出血沫;
  • 4.牛肉清洗干净,沥干备用;
  • 5.番茄和胡萝卜切块备用;
  • 6.热锅冷油,加入桂皮,八角,干辣椒,小茴香炒出香味;
  • 7.倒入沥干的牛肉,翻炒均匀;
  • 8.加入番茄酱;
  • 9.加入豆瓣酱,翻炒均匀;
  • 10.转入砂锅中,倒入开水;
  • 11.加入生抽;
  • 12.加入老抽,用勺搅匀;
  • 13.加入姜片、蒜片、葱,大火加热至沸腾,转小火,炖上1.5个小时;
  • 14.炖到30分钟时,舀出一碗牛肉汤做汤料备用,牛肉继续炖;
  • 15.炖好的牛肉加适量盐和冰糖调味;
  • 16.另起锅,将刚舀出来的汤倒入,加入胡萝卜煮熟;
  • 17.加入番茄,加适量盐调味,汤料完成;
  • 18.将面条煮熟,加入煮好的胡萝卜汤料,再配上适量的牛肉,红烧牛肉面完成。
